Beets are a reliable cool-weather crop that grows well in temperate climates. One of the biggest advantages of beets is that you can grow them in both early spring and late fall, in as little as two months.

This way homesteaders can maximize their garden space when temperatures are too low for other vegetables.

Types of Beets

How you preserve your beets will depend on the type you’ve grown. 

All current beet varieties under cultivation are descendants of the wild beetroot, also known as the sea beet or Beta vulgaris subsp. Maritima.

Farmers and homesteaders grow beetroot in three basic forms:

• Table beets
• Fodder beets
• Sugar beets

Chard is a related species, but normally grown for its dark red leaves and not typically preserved.

Table Beets

Table beets are the red or yellow root vegetables most of us are familiar with. You’ll see them in grocery stores in cans or jars. 

Fodder Beets

Fodder beets, or field beets, are used to feed livestock. Often called mangel beets, these grow much larger than table beets.

The Red Mammoth variety boasts a 20-pound root and edible greens up to a meter in height. Although they’re used to feed animals, they’re perfectly suitable for human consumption and considered a survival crop in times of need.

Sugar Beets

Sugar beets are higher in sucrose and lower in moisture than table or fodder beets. Up to one-third of the world’s table sugar production comes from sugar beets.

They can easily be converted to usable sugar, even at home. This means homesteaders in cooler climates can become more self-sufficient in those small but important luxuries.

10 Options for Preserving Beets

Some methods may seem obvious, but we have also included some of the more unusual ways to preserve beets.

When most people think about growing and preserving beets, they think about pickled red beets or canned beets from the grocery store. We’ve found a few more creative ways to preserve the different types of beets.

1. In the Ground

Beets offer flexibility during the busiest times of the growing year because they can be harvested at different stages. They’re also extremely cold hardy, so one of the simplest and easiest ways to store beets is in the ground.

Being in a survival situation means you must adapt, and make the best possible use of what resources you have at hand. When it comes to necessities like water, shelter, and food, want will have nothing to do with it.

If you’re out of food and want to eat, all that matters knows what you can eat in the wild, that will provide your body with the fuel it needs under the circumstances.

This means you might well end up eating things, and animals, that you would never, ever consider eating otherwise. How about coyotes? Can you eat coyotes in a survival situation?

Yes, you can. So long as it is prepared and cooked properly coyote meat is a safe and nutritious option in a survival situation.

Coyotes have a decidedly mixed reputation, at best. Seen as pests and predators, or scavengers at the very best, they have long been thought of as inedible due to their own diets and due to a general cultural distaste for eating canines, at least in the United States.

Where Do Coyotes Live?

Coyotes are among the most successful and wide-ranging canines on Earth.

Covering the entire North American continent except the far north-eastern and north-central parts of Canada, coyotes can be encountered pretty much everywhere, though their numbers are greatest in the American West.

There are no coyotes, however, in Hawaii, despite long-running rumors to the contrary.

Coyotes typically inhabit open areas with plenty of cover in the form of trees, shrubs, and tall grasses. They are also found in semi-arid desert regions and in forested areas near water.

Coyotes are primarily carnivorous and can routinely be found anywhere their prey is, especially around ready sources of food in the form of small livestock and pets.

Food gardens have been an existing self-provisioning practice in families for centuries now.

Since their first appearance in the urban context in 1760, it has only been gaining more popularity and importance.

During the first world war when the government encouraged US citizens to start gardens.

In the 1930s, when the Great Depression hit hard, people had to turn to planting their own food to escape poverty and starvation.

Nowadays, times are getting more and more unstable. Vegetable gardens are not only great for surviving in times of crisis but can also provide you with fresh foods and scarce elements in your region.

It is also considered a relaxing activity, either to spend some quality time with your family or to do by yourself.

As a prepper and gardener, being able to produce everything you consume within a whole year will save a lot of money.

To start a vegetable garden, start by designing your space. Choose a spot that is spacy enough, depending on the quantity and size of what you are choosing to plant.

The spot should also be getting a fair amount of sunlight during the day (at least 8 hours), as most vegetables need a lot of direct sun to best harvest.

Next, decide on what to plant. Pick something relatively easy to grow, such as tomatoes, cucumber, or even spinach.

Why You Should Put Plastic Forks In Your Vegetable Garden

This is my favorite gardening tip. Plastic forks could be a multifunction tool in your garden. I’ll mention here some of their uses.

Keeping Animals Away

Your pets keep ruining your garden, digging the soil, running over your vegetables.

Plastic forks are great to keep pets and wild animals away. Just stick them in the ground of your garden, placing them some inches apart to prevent animals from stepping over them.

Keeping Plants Still

Getting your plants to stay down can be a struggle. Plastic forks can help you with that.

Insert the tines of the fork into the ground around the plants to hold properly and push down. It will keep your vegetables and plants in place for you.

In comments to the National Institute of Standards and Technology, EPIC urged NIST to endorse the adoption of differential privacy in its revised paper on de-identifying government data sets. The paper will provide guidance to federal agencies on deidentification techniques, strategy, and implementation.

EPIC commended NIST on its recommendations, which include detailed guidance for federal Data Review Boards that would evaluate risk and probability of reidentification. But EPIC urged NIST to go further by emphasizing differential privacy as a preferred privacy-enhancing technique and “identifying specific circumstances where differential privacy should be used or strongly favored.” Differential privacy, which is achieved through the controlled injection of statistical noise into a published study or analysis of a dataset, is a mathematically rigorous means of controlling privacy risk while preserving the research value of the information.

EPIC has long worked to secure the confidentiality of personal data held by government agencies and often has advocated for the adoption of differential privacy. In 2021, EPIC filed an amicus brief defending the Census Bureau’s use of differential privacy, calling it “the only credible technique to protect against [reidentification] attacks, including those that may be developed in the future.” EPIC noted that differential privacy “is not the enemy of statistical accuracy,” but rather “vital to securing robust public participation in Census Bureau surveys[.]”

In September, EPIC bestowed a Champion of Freedom Award on John Abowd, chief scientist of the U.S. Census Bureau, for “making remarkable strides for privacy and civil rights by transforming the disclosure avoidance system at the U.S. Census Bureau through the introduction of differential privacy.” And in recent comments to the White House Office of Science and Technology Policy, EPIC urged federal agencies to prioritize the adoption of differential privacy and to increase funding across the board for privacy-enhancing technologies.
